Uncharted 2 for sure.  Great game.
Little Big Planet, God Of War 3 (and smoothed-out PS3 upgrades of 1 and 2 are now available in the same pack), Metal Gear Solid 4, Killzone 2, and the latest Ratchet and Clank is quite popular to newbies to the series.
Heavenly Sword is only alright, but it's so cheap to pick up now that it might be worth getting as a stopgap between bigger purchases.

I don't have a PS3 myself so haven't played much, but everyone I know that has one raves about Uncharted 2 like it's the second coming, so it should be worth a go. The first one's also meant to be great and should be pretty cheap these days I would imagine.
