Characters who are just evil are boring, while the possibility of redemption gives them depth and creates the potential for more interesting stories. Modern audiences - and not just teenage girls - expect more than "he does it because he's the bad guy" because that won't even pass muster these days in cartoons aimed at children.
For all its faults, I do admire that Coppola's Dracula drew upon the Vlad Tepes of Romanian folklore to flesh out its antagonist, it's just a shame that the rest is such a mess.
