It certainly is an acquired taste - a bit too rich for my liking, even when I still ate meat. Of course, as a child I ate whatever was put in from of me without complaint, but the last time I was given rabbit, many years ago, I ate it out of politeness only. I was somewhat put off by the vertebrae and bits of spinal chord on my plate.

Is that how it's usually served, or had the cook made a faux pas? DD, please advise...

I'm sure someone can correct me on this, but isn't it illegal to serve food with spinal cord and other brain-related materials still in evidence?

As a country bumpkin and having actual poachers as relatives I can telly you wild rabbit is great (but don't get a mixy one)

I think what you do in your own kitchen is entirely up to you, Byron, so long as it's not going on sale. I don't know that the spinal material prohibition applies to rabbits, but I'm no expert (anyway just to clarify, this was in the mid-1980s).
