I like a nice thick soup...

...with potatoes, lots of chunky chicken bits, creamy, with herbs, carrots, peas, a bit of rice and not too hot.

What soup do you like.*












* due to the cold weather I've been having a soup a day for christ knows how long and I have subsequently come to the above conclusion that that is my perefered soup of choice. Pref. the covent garden soup Co., Baxters are a bit watery and Morrisons a tadge too cheap tasting, and I like them with a fresh ciabatta Sun dried tomato roll. Sad I know but it is Friday :-)

Homemade lentil soup like I had last night (made with green AND red lentils, plus other goodnesses including loads of pepper).

I've been farting so badly today that it necessitates half-hourly walks outside the office.

You know you've made a great lentil soup when you have to keep going outside to 'walk off the wind' and you're twenty stories up...

I had leek and potato with a bit of cheese on top at lunchtime. I'm quite partial to tomato or a decent minestrone or anything home made. There used to be a great Malaysian chicken and sweet corn soup you added an egg to, used to eat gallons of that, but I've not seen it for ages.

My girlfriend has been making a lot of soup lately, which I've been taking to work with me. She makes a mean Honeyed Parsnip soup, and her Curried Sweet Potato soup's pretty bloody good, too. Today, I have Carrot & Ginger.

OK Huff - sorry about the delay. Had to wait for 'er indoors to type up the recipes.

Honey Roasted Parsnip Soup

Ingredients
 
25g unsalted butter
500g parsnips, roughly chopped
? onion, roughly chopped
1 carrot, roughly chopped
1 small clove of garlic, roughly chopped
1 tsp thyme leaves
1 small bay leaf
1 tbsp clear honey
1l chicken or vegetable stock
6tbsp dry cider
4tbsp double cream
Method
 1. Preheat the oven to 220C/425F/Gas7. Heat the butter in an ovenproof casserole dish, add the parsnips and roast in the oven for about 25-30 minutes, until golden brown.
2. Add the onion, carrot and garlic and continue cooking for a further 10 minutes, then mix in the herbs and honey. Cook for about 10 minutes until the vegetables have caramelized.
3. Now remove the dish from the oven, add the stock and bring it to the boil on top of the stove. Reduce the heat and simmer for 10 minutes.  
4. Add the cider then pur?e until smooth. bring back to the boil, then remove from the heat, swirl in the cream and serve.




Curried Sweet Potato Soup


Ingredients

500g sweet potato, peeled & diced
2 tblspns olive oil
1 tblspn butter
? l chicken or vegetable stock
1tblspn curry paste
handful chopped fresh coriander


Method

     1. Melt butter & oil in large saucepan, add sweet potato and cook,      
2.   add curry paste, turn up the heat and stir for a minute or so.
3.   pour in the stock, bring to the boil, then cover the pan and simmer on a gentle heat for about 15 min, or until the sweet potato is very tender.
4.   remove from heat, add the coriander, and blitz until smooth.




Mmmm... soup.
